Simple Crockpot Beef Stew
Simple Crockpot Beef Stew is a staple in our home every fall and winter. Made with stewing beef, potatoes, carrots, and peas all in a delicious flavourful gravy-like base. This hearty stew with a flakey biscuit is the perfect combo to fill bellies on a cold day.
What you will need:
- Crockpot *
- Frying pan
- Beef stew chunks
- Carrots
- Peas
- Onion
- Red Potatoes
- Worcestershire Sauce
- Fresh or Dried Thyme
- Salt & Pepper
- Better than Bouillion Beef Flavour
- Olive Oil
- Cornstarch
- Butter
How to Make Simple Crockpot Beef Stew
Prep all of your vegetables by chopping and dicing your potatoes, peas, carrots, and onion and place into a crockpot. Prep a frying pan with oil (I use olive oil) about 2 tbsp and brown all of your beef chunks on medium heat. Once they are all browned place into the crockpot. Using a large spoon stir to combine. Mix 4 tbsp of Better than Bouillion Beef Flavoured paste into 5 cups of hot water until dissolved and pour over top. Add more water to the crockpot until veggies are covered. Add salt, pepper, Worcestershire sauce and sprigs of thyme. Cover and set the crockpot to high.
After 5 hours, in a frying pan add 1/3 cup of butter and melt. Add 1/4 of cornstarch to create a roux on low heat. Whisk until there are no lumps. Add mixture to the crockpot carefully giving it a gentle stir to incorporate it. Let it simmer for the remaining hour.
FAQ
Can I make this slower? Yes you can cook it on “Low” for 8 hours
Can I use my Instapot? If your instant pot has a slow cooker function, YES! Just be sure to adjust the amount to fit your instant pots because most are much smaller than a crockpot.
Do I have to brown the meat? Yes! this part is really important when it comes to maintaining that yummy flavour.
Can I cook it on the stove? I don’t really recommend this because elements can get too hot and risk burning your soup.

- 1 Crockpot/Slow Cooker 10qt
- 1 Frying Pan
Ingredients
- 2 lbs Beef stewing meat
- 2 tbsp Olive oil For browning meat.
- 2 lbs Red Potatoes Diced
- 1 Med Onion Diced
- 5 Carrots Diced
- 1.5 cups Frozen Peas
- 5 cups Water
- 2 tbsp Worcestershire Sauce
- 4 tbsp Better than Bouillon Beef Flavoured
- 4 Sprigs Thyme
- 2 tsp Salt
- 1 tsp Pepper
- 1/3 Cup Butter
- 1/4 cup Cornstartch
Instructions
- Prep and dice veggies. Place in crockpot.
- In a large frying pan heat oil. Brown stewing meat. Once browned on all sides, add to crockpot. Gently stir ingredients.
- In a measuring cup or bowl, mix better than bouillion paste with hot water until dissolved. Pour into the crockpot with the rest of the water. Add in worcestershire sauce, salt, pepper, and thyme sprigs.
- Turn on high for 5 hours.
- In a frying pan melt butter and whisk in cornstarch to create a roux. Whisk until no lumps are left. Stir carefully into the crockpot. Allow to simmer an additional 30 minutes.
